Glass noodles, which are made from mung beans and appear translucent, are packed with carbs and iron. “I use glass noodles for Asian food, but they’re very versatile,” says Nate Appleman, chef, three-time marathoner, and culinary manager for Chipotle Grill. “You can substitute them for any pasta.” Slightly chewier than regular pasta, glass noodles are gluten-free.
